{"id":232,"date":"2006-08-22T07:13:25","date_gmt":"2006-08-22T12:13:25","guid":{"rendered":"http:\/\/auroralux.net\/blog\/2006\/08\/22\/sweet-potato-salad\/"},"modified":"2006-08-22T10:18:09","modified_gmt":"2006-08-22T15:18:09","slug":"sweet-potato-salad","status":"publish","type":"post","link":"https:\/\/fhmiv.net\/blog\/2006\/08\/22\/sweet-potato-salad\/","title":{"rendered":"Sweet potato salad"},"content":{"rendered":"<p>We FINALLY brought a dish to Grandma&#8217;s birthday party that someone ate besides us: <\/p>\n<blockquote><p>\nSweet Potato Salad<br \/>\nFrom: The Thrill of the Grill<\/p>\n<p>4 medium sweet potatoes (about 2 pounds cut into uniform large pieces<br \/>\n1\/2 red bell pepper, seeded and diced small<br \/>\n1\/2 green bell pepper, seeded and diced small<br \/>\n1\/2 large red onion, diced small<br \/>\n4 T finely chopped parsley<\/p>\n<p>For the dressing<br \/>\n3 T Dijon mustard<br \/>\n3 T ketchup<br \/>\n1 t minced garlic<br \/>\n3\/4 c olive oil<br \/>\n4 T cider vinegar<br \/>\n1 T Worcestershire sauce<br \/>\n2 T lime juice<br \/>\nSalt and pepper to taste<\/p>\n<p>Bring salted water to boil and boil sweet potatoes 10-12 min. You should be able to pierce them with a fork, but still feel some resistance and they shouldn&#8217;t fall apart. Don&#8217;t over cook!<\/p>\n<p>Prepare ice water bath in your sink for potatoes.<\/p>\n<p>When potatoes are done, drain in a colander and plunge into ice bath. Then drain well.<\/p>\n<p>Add peppers, onion and parsley.<\/p>\n<p>Make dressing by combining mustard, ketchup and garlic. Whisk in olive oil. Add vinegar, Worcestershire and lime juice, salt and pepper. <\/p>\n<p>Pour dressing over potatoes and serve or refrigerate.\n<\/p><\/blockquote>\n<p>The recipe says this will keep for 5 days, but I&#8217;ve noticed that the vinegar seems to break down the potatoes into mushiness after a day.
